Seoul’s ZEST has earned its place in the World's 50 Best Bars list, ranked No.2 in Asia for three years running. But beyond the accolades, what truly stands out to us as bar designers is how every element of the space supports both the guest experience and operational performance.
The Concept
The bar’s commitment to sustainability is immediately apparent. ZEST produces minimal waste, sourcing local and seasonal ingredients, and curates a menu carefully tailored to the venue. We particularly enjoyed their take on a gin and tonic, infused with seasonal fruits and herbs, accompanied by a zero-waste tonic - a cocktail that exemplifies design thinking applied to ingredients and menu strategy.
The Design
The interior is a masterclass in minimalistic luxury. Clean lines, subtle textures, and considered lighting create an intimate atmosphere where every seat feels connected to the bar’s energy. Limited seating capacity ensures engagement with the guests, while the ‘deli-style’ bar layout places bartenders centre stage, allowing guests to witness the craft of cocktail creation first hand. From a design perspective, we appreciated the use of high-quality stainless steel for the operational areas, a functional touch that also elevates the aesthetic.
The Bartenders
The bartenders themselves enhance the design. Their attentiveness and willingness to guide guests through tasting samples creates a personal connection, reinforcing the venue’s identity as a space where design, hospitality, and operations intersect seamlessly.
